GiantMouse knives started over drinks at a US knife show in 2015, when Danish designers Jesper Voxnaes and Jens Ansø and American entrepreneur Jim Wirth decided they could build a better mousetrap. The formula has not changed since: Scandinavian design discipline, premium materials, and production partners held to standards the designers verify personally, anchored in Maniago, Italy, a town with six centuries of blade making behind it. Ansø stepped away at the start of 2025 to focus on Ansø of Denmark, and Voxnaes and Wirth now lead the brand, with every co-designed model still carrying the Vox/Ansø credit it earned.
The ACE line carries the everyday catalog: the Jagt brings a hunting slant to the folder lineup, the Biblio remains the compact classic named for the Brooklyn bar where the brand was planned, and the Nibbler, REO, Atelier, Farley, Corta, and Sonoma round out a bench of folding knives that runs from deep-carry slims to hard-use workhorses. The GM series operates differently. Each design releases in a single run of 400 pieces, 300 standard and 100 pirate editions wearing the eyepatched mouse, and once they sell, the design retires for good.
GiantMouse runs a short list of proven powder steels. CPM MagnaCut headlines current production for its rare pairing of corrosion resistance and toughness, Elmax carries much of the lineup with the balanced wear resistance that made it a Scandinavian favorite, and Böhler M390 appears on select editions for maximum edge retention. Titanium framelocks, nested linerlocks, and bearing pivots handle the mechanical side across thumb hole, flipper, and front flipper deployments. The GMF1, GMF2, and GMF4 translate the same design language into compact fixed blade knives sized for belt carry, food prep at camp, and small game work, honoring the Danish habit of pairing a fixed blade with a sharp folder.
