Made in Japan using VG10 San Mai construction, these knives run a 2mm spine with hand-sharpened edges that bite immediately and follow through clean. The San Mai cladding keeps the VG10 core protected while adding just enough flexibility to prevent chipping under normal use. Traditional octagonal Japanese Red Oak handles keep weight toward the blade where it belongs—the Gyuto comes in under 5 oz with forward balance that lets the edge do the work.
The lineup covers the essentials: a 6" Petty for detail work, a 6.75" Santoku for all-around prep, a 7" Nakiri for vegetable breakdown, an 8" serrated Bread knife, and the 8" Gyuto as the workhorse. All five share the same construction and handle profile for a consistent feel across your block.
