Nitro-V functions as a martensitic stainless steel developed by New Jersey Steel Baron as an enhanced version of AEB-L steel. The composition includes added nitrogen and vanadium for improved toughness and corrosion resistance. Nitro-V achieves hardness between 58-62 HRC with excellent toughness values, making it suitable for thin edge geometry without brittleness. The steel maintains stainless properties while offering easier sharpening than powder metallurgy alternatives.
Graber Forge's kitchen lineup includes Santoku blades with flat cutting edges, Bunka knives with reverse tanto tips, K-tip designs with angled points, and paring knives for detail work. Bird and trout knives feature narrow profiles for filleting applications. Each profile utilizes thin blade stock appropriate for Nitro-V's toughness characteristics. EDC fixed blades range from 3-4 inches with drop point or clip point geometries, full tang construction, and come with sheath options for belt carry.
Handle construction uses G-10 fiberglass laminate in various color combinations. Two-tone G-10 layers contrasting colors, while multi-colored options incorporate three or more laminated layers.
