J. Hoffman Knives is the one-man shop of Jess Hoffman in Shawano, Wisconsin, about an hour down the road from us, hand-crafting fixed blades and their sheaths since 2012. Every model carries the name of an Irish county in tribute to his mother's family, the Carlow included, and his stylized H maker's mark comes from the logo of the Hochgreve Brewery, the Green Bay family business that raised his great-grandfather.
Good enough for BLADE Magazine features and a Voting Membership in the Knifemakers' Guild, and built on a philosophy Hoffman states plainly: he does not make safe queens. Blades run full flat or full hollow grinds because the thinner angle behind the edge simply cuts better, bevels are ground after heat treat for consistency, and everything from grinding to heat treatment to leather work happens in his shop with American materials, down to Crucible steel and Wickett and Craig leather. The Carlow is his do-it-all compact fixed blade, sized for EDC, kitchen duty, and field work in the same week, with the Mid Carlow splitting the difference for smaller hands and lighter carry. Handles favor figured woods and micarta, leopard wood and butterscotch paper micarta among them, all covered in our knife handle materials guide. A one-man Wisconsin shop only makes so many knives a year, and we get our share.
