The Fillet blade is nice and thin, just like their culinary line, offering a perfect balance, flex, and 7.25 inches of cutting edge. This knife will fit all kitchen blocks. Tumbled to a satin stonewash finish, their proof of tooling can be seen on this great blade. They recommend hand washing and a light oiling prior to storage.
