The Bunka is a Japanese kitchen knife pattern that blends the height of a gyuto with a more angular, reverse-tanto tip. Edge Knife Works hand forges this version for cooks who want a versatile blade that handles vegetables, proteins, and fine knife work in one tool.
Blade
The 7" blade is hand forged from MagnaCut steel at 0.108" thick. MagnaCut is a modern powder metallurgy steel developed specifically for knife applications, offering excellent edge retention along with strong corrosion resistance and toughness - a combination that's hard to find in older steel formulas. The bunka profile gives you a straight edge for push cuts and a sharp, angled tip for detail work.
Handle
The handle is Micarta, a composite made from linen or canvas fabric layered with resin under heat and pressure. It's dense, stable, and resists moisture absorption, which matters in a kitchen environment where the handle sees constant contact with water and food. At 7.48oz, the knife balances well for extended use at the cutting board.
Carry
This is a fixed blade with no lock mechanism - the blade is a single piece of steel from tip to tang, giving it a rigid, dependable feel with no moving parts to maintain. Store it in a knife block, on a magnetic strip, or in a blade guard to protect the edge between uses.
