White River fillet knives are made for the serious angler, and there is a blade for every fish you catch. Built in the USA by White River Knife & Tool in Fremont, Michigan, the lineup runs from the award-winning standard fillet to the Step-Up and the Pro series, and both freshwater and saltwater fishermen report filleting dozens of large fish without ever touching up the blade.
The standard White River fillet comes in 6 or 8.5 inch blade lengths, ground thin from .080 inch 440C at 58 to 59 Rc for the flex and edge a fillet knife needs. Handles come in ultralight cork or tough black canvas Micarta, a strong value for anglers who want a proven White River edge.
The Step-Up is a hand finished, full tang fillet with an 8.13 inch CPM S35VN blade. Its stepped design gives you a clear view of where the blade is for precise cuts and extra knuckle clearance for very thin filleting. Textured Richlite or G-10 scales hold a no-slip grip even when your hands are wet and slimy.
The Pro series brings CPM S35VN at 59 to 60 Rc, cryogenically tempered and leather honed, in 6, 8, and 10 inch blades on .095 inch stock. Textured Richlite and G-10 scales keep a positive grip, and at 4.2 to 4.6 ounces they stay light in the hand from panfish to salmon. Our comparison of every major knife steel shows how S35VN and 440C compare.
Every White River fillet ships with a Kydex sheath and is guaranteed for life with free sharpening. For cleaning birds and trout in the field, see the compact White River Shoal, or compare other makers in our full fillet knives collection.
