The Custom Shop is where one of a kind craftsmanship meets serious steel. These are not production knives. They are limited runs, maker exclusives, and individual pieces from independent knifemakers who build every blade by hand, and most of what lands here is made in the USA by people who earned their reputations one knife at a time. Inventory moves fast and rarely repeats. When a piece sells, it is usually gone for good.
The fixed blade bench runs deep. Fiddleback Forge builds convex ground woods knives with spalted and stabilized handle woods nobody else can match. Darlington Edgecraft, Lishen, Warlander, and Edge Knife Works each bring a different answer to the same question of what a hand built working knife should be, from field patterns to hard use tacticals.
Custom pocket knives are where machine work becomes jewelry that cuts. Herman Knives builds sculpted titanium framelocks in Poland, and the deep engraving and inlay work on a Bee or an Ishtar embarrasses factories ten times the size. Curtiss builds precision framelocks that collectors chase run after run, and William Henry occupies the luxury end with mokume, hand forged Damascus, and exotic inlays on folders meant to be inherited.
The same attention lands on the cutting board. Custom kitchen knives here run modern stainless like MagnaCut and Nitro-V, chosen because a chef knife lives wet and a hand ground culinary blade deserves steel that keeps up. These are makers who treat a gyuto with the same seriousness as a field knife, thin behind the edge and finished by hand.
Premium steels run throughout the Custom Shop. MagnaCut, M390, AEB-L, and CPM-154 cover the modern end, and hand forged Damascus from smiths like Vegas Forge and Baker Forge covers the traditional one. Handle materials range from stabilized burls and desert ironwood to canvas micarta and stacked leather, with hand selected liners, mosaic pins, and tapered tangs marking the details that separate custom work from factory output.
